The rule of serving red wine at room temperature dates back to a time when homes were cooler. Today, at 23–25°C, many red wines can taste overly alcoholic and heavy.
The ideal serving temperature depends on the wine’s style:
12–14°C: Light-bodied reds, such as Beaujolais.
14–16°C: Medium-bodied wines, including many Merlots.
16–18°C: Full-bodied reds, such as Cabernet Sauvignon.
Tip: Try putting red wine in the refrigerator for 15–20 minutes before serving. Slightly chilling the wine often makes it taste fresher and more balanced.
